做法:洗(xǐ )净宰好(hǎo )鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把(bǎ )陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热(rè )下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火(huǒ )煮(zhǔ )沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。 -
