做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲一(yī )个半小(xiǎo )时,下盐调味(wèi )即可品尝。 -
