做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎(jiān )煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮沸,转中小火(huǒ )煲一个半小(xiǎo )时,下盐调(diào )味即可品尝。 -
