做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅(guō ),用(yòng )姜块在锅上(shàng )擦一遍(biàn ),放两勺(sháo )油,待(dài )油六成(chéng )热下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐调味(wèi )即可品尝。 -
