做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山(shān )和薏(yì )米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两(liǎng )勺油,待油六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐(yán )调味(wèi )即可品尝。 -
